Bug\u00fcn o fidanlar\u0131n g\u00f6lgesinde \u00fcretim yapan \u00d6cal, ge\u00e7mi\u015ften \u00f6\u011frendiklerini modern tar\u0131m teknikleriyle bulu\u015ftururken Derik zeytininin de\u011ferini art\u0131rmak i\u00e7in g\u00f6n\u00fcll\u00fc \u00e7al\u0131\u015fmalar y\u00fcr\u00fct\u00fcyor. Okuldan yeni gelmi\u015f, \u00e7antam\u0131 masan\u0131n \u00fczerine b\u0131rakm\u0131\u015f, mutfa\u011f\u0131n yolunu tutmu\u015ftum. Babaannem kap\u0131da dikilmi\u015f g\u00fcl\u00fcmseyerek bana bak\u0131yordu. &#8221;Hadi o\u011flum, \u00fcst\u00fcn\u00fc de\u011fi\u015ftir, bah\u00e7eye gidiyoruz, yeme\u011fimizi orda yiyece\u011fiz.&#8221; dedi, elindeki \u00e7\u0131k\u0131n\u0131 g\u00f6stererek. Bah\u00e7eye hi\u00e7bir zaman hay\u0131r demeyece\u011fimi bildi\u011fi i\u00e7in olsa gerek, merdivenlerden a\u015fa\u011f\u0131 inerek avluda beni beklemeye koyuldu.<\/p>\n\n\n\n<p>Bah\u00e7eye vard\u0131\u011f\u0131m\u0131zda saat iki sular\u0131yd\u0131. Her zaman yapt\u0131\u011f\u0131m gibi, bah\u00e7emizin hemen a\u015fa\u011f\u0131s\u0131ndan akan dereye ko\u015ftum. Kurba\u011falar\u0131 ve su kaplumba\u011falar\u0131n\u0131 izledim bir s\u00fcre. Bu arada babaannem \u00e7\u0131k\u0131n\u0131m\u0131z\u0131 \u00e7imlere serdi\u011fi yer sofras\u0131na dizmi\u015f, bah\u00e7emizin birka\u00e7 y\u00fcz metre yukar\u0131s\u0131ndaki p\u0131nardan su getirmi\u015fti. Yapraklar\u0131n\u0131n \u00e7o\u011funu d\u00f6km\u00fc\u015f olan dev ceviz a\u011fac\u0131m\u0131z\u0131n alt\u0131nda yeme\u011fimizi yedik, sofram\u0131z\u0131 toplad\u0131k. Babaannem, hadi o\u011flum, bug\u00fcn i\u015fimiz \u00e7ok, dedi. Sonra tek odal\u0131 bah\u00e7e evimizin arkas\u0131ndaki avluya y\u00f6neldi, ben de onu takip ettim. Bir le\u011fenin i\u00e7indeki suya yat\u0131r\u0131lm\u0131\u015f zeytin yumrular\u0131n\u0131 g\u00f6stererek, bunlar\u0131 topra\u011fa dikece\u011fiz bug\u00fcn, dedi. Bah\u00e7ede zaman ge\u00e7irmeyi, ceviz a\u011fac\u0131na kurdu\u011fumuz sal\u0131ncakta sallanmay\u0131, derede y\u00fczmeyi, kay\u0131s\u0131 ve incir a\u011fa\u00e7lar\u0131ndan ellerimle kopard\u0131\u011f\u0131m yemi\u015fleri yemeyi ve hasat zaman\u0131nda zeytin a\u011fa\u00e7lar\u0131na \u00e7\u0131k\u0131p zeytin toplamay\u0131 \u00e7ok severdim ama o g\u00fcne kadar hi\u00e7 fidan dikmemi\u015ftim. O g\u00fcn babaannemle birlikte her biri dip s\u00fcrg\u00fcn\u00fcyle birlikte bir miktar odunla kesilmi\u015f d\u00f6rt ya da be\u015f k\u00f6k zeytin yumrusunu bah\u00e7emizin de\u011fi\u015fik yerlerine diktik.<\/p>\n\n\n\n<p>\u200bEtek k\u0131sm\u0131n\u0131 beline dolad\u0131\u011f\u0131 uzun entarisiyle bah\u00e7ede dola\u015fan babaannem, \u201cbug\u00fcn dikti\u011fimiz a\u011fa\u00e7lar\u0131n zeytin verdi\u011fini g\u00f6remeyece\u011fim belki ama sen b\u00fcy\u00fcd\u00fc\u011f\u00fcnde bunlar\u0131 birlikte dikti\u011fimizi hat\u0131rlayacaks\u0131n ve karde\u015flerinle siz yiyeceksiniz\u201d dedi. Garip bir h\u00fcz\u00fcn vard\u0131 \u00fczerinde o g\u00fcn.<\/p>\n\n\n\n<p>B\u00f6yle g\u00fcnlerde ya zabit olan babas\u0131ndan, yetim kald\u0131\u011f\u0131, zor ge\u00e7en \u00e7ocukluk g\u00fcnlerinden ya da \u00f6ncekine g\u00f6re daha s\u0131k yapt\u0131\u011f\u0131, a\u011fa\u00e7lardan bahsetmeye devam etti: \u2018\u2019\u015eu a\u011fac\u0131m\u0131z melqebaz\u00ee, ya\u011f\u0131 tatl\u0131 olur, zeytinini ya\u011f yapar\u0131z, \u015fu a\u011fac\u0131m\u0131z zoncik, sofral\u0131k, k\u0131rma zeytini \u00e7ok lezzetli olur, \u015fu a\u011fa\u00e7 xurs\u00eak\u00ee, ge\u00e7en y\u0131l birlikte \u00e7izmi\u015f ve nas\u0131l tatland\u0131rd\u0131\u011f\u0131m\u0131 anlatm\u0131\u015ft\u0131m sana, \u015fu a\u011fa\u00e7lar da xirxal\u00ee, en de\u011ferli zeytinimizdir, hem sofral\u0131k olur hem de ya\u011f\u0131 \u00e7oktur. Eskiden bu zeytinlerden sadece ya\u011f yapard\u0131k ama \u015fimdi herkes k\u0131rmas\u0131n\u0131 yap\u0131yor.\u2019\u2019<\/p>\n\n\n\n<p>\u200bO g\u00fcnden sonraki bah\u00e7eye her gidi\u015fimde ilk yapt\u0131\u011f\u0131m i\u015f, dikti\u011fimiz zeytin yumrular\u0131na bakmak olurdu. Havan\u0131n kurak oldu\u011fu g\u00fcnlerde dereden kovayla su ta\u015f\u0131y\u0131p sulard\u0131m. Sonraki y\u0131llarda babaannem ya\u015flanm\u0131\u015f, bah\u00e7eye gelemez olmu\u015ftu. Bah\u00e7eye gitti\u011fim g\u00fcnlerde de eve d\u00f6ner d\u00f6nmez daha o sormadan g\u00fcn\u00fcn raporunu verirdim. \u015eu a\u011fac\u0131m\u0131z b\u00f6yle, bu a\u011fac\u0131m\u0131z b\u00f6yle diye. Yumrular\u0131m\u0131z, bir tanesi hari\u00e7, ye\u015fermi\u015f, onun deyi\u015fiyle tutmu\u015ftu.<\/p>\n\n\n\n<p><strong>Ayr\u0131l\u0131k vakti<\/strong><\/p>\n\n\n\n<p>Babaannemi 1992 y\u0131l\u0131nda kaybettik, ger\u00e7ekten de beraber dikti\u011fimiz a\u011fa\u00e7lar\u0131n zeytin verdi\u011fini g\u00f6remedi. Sadece o dikti\u011fimiz zeytin fidanlar\u0131nda de\u011fil, bah\u00e7enin her kar\u0131\u015f\u0131nda eme\u011fi, al\u0131n teri ve an\u0131s\u0131 ya\u015famakta. Bu duygunun psikolojide nas\u0131l tan\u0131mland\u0131\u011f\u0131n\u0131 bilmiyorum, sizde de benzeri bir his olu\u015fmu\u015ftur mutlaka, de\u011fer verdi\u011fimiz ama kaybetti\u011fimiz yak\u0131nlar\u0131m\u0131zla, \u00f6zellikle de onlar\u0131 bize \u00e7a\u011fr\u0131\u015ft\u0131ran mek\u00e2nlarda veya durumlarda, konu\u015furuz zaman zaman. Bizi g\u00f6rd\u00fcklerini, izlediklerini d\u00fc\u015f\u00fcn\u00fcr\u00fcz i\u00e7ten i\u00e7e. Bug\u00fcn bile babaannemden bize miras kalan bah\u00e7emize gidi\u015flerimde ve \u00f6zellikle bah\u00e7ede \u00f6nemli bir de\u011fi\u015fiklik yapt\u0131\u011f\u0131mda babaannemle konu\u015fur, yapt\u0131\u011f\u0131m yenilikleri monologlar\u0131mla anlat\u0131r\u0131m ona, kar\u015f\u0131mdaym\u0131\u015f, beni dinliyormu\u015f gibi.<\/p>\n\n\n\n<p><strong>Bah\u00e7eye d\u00f6n\u00fc\u015f ve gelenekle modernin bulu\u015fmas\u0131<\/strong><\/p>\n\n\n\n<p>\u200bLiseden sonra gelen \u00fcniversite y\u0131llar\u0131 bah\u00e7eden, zeytin a\u011fa\u00e7lar\u0131ndan ayr\u0131l\u0131k y\u0131llar\u0131yd\u0131 benim i\u00e7in. Yaz tatillerinde bu ayr\u0131l\u0131\u011f\u0131n ac\u0131s\u0131n\u0131 \u00e7\u0131kar\u0131rd\u0131m ger\u00e7i ama yetmezdi, doymazd\u0131m. Sonra \u00f6\u011fretmen olarak d\u00f6nd\u00fc\u011f\u00fcm Derik\u2019te bah\u00e7eyle olan ili\u015fkim yeniden ba\u015flad\u0131, uzun zamand\u0131r mecburen ayr\u0131 kald\u0131\u011f\u0131m ama asla unutmad\u0131\u011f\u0131m ve \u00e7o\u011fu kez hayalimde kurgulad\u0131\u011f\u0131m, d\u00fczenledi\u011fim, de\u011fi\u015ftirip d\u00f6n\u00fc\u015ft\u00fcrd\u00fc\u011f\u00fcm bah\u00e7eme, eski bir dostuma kavu\u015fmu\u015f gibi hissediyordum. Bu d\u00f6nem benim i\u00e7in bir sentez d\u00f6nemi olacakt\u0131. Eskiyle yeninin daha do\u011frusu gelenekten \u00f6\u011frendiklerimle modern bilginin harmanlanmas\u0131 d\u00f6nemi olacakt\u0131. Ekolojiyle dost, sa\u011fl\u0131kl\u0131 \u00fcr\u00fcnler yeti\u015ftirmenin ne kadar \u00f6nemli oldu\u011funu ve ne kadar \u015fansl\u0131 bir \u00e7ocukluk ge\u00e7irdi\u011fimi anlad\u0131ktan sonra bu i\u015fi profesyonelce yap\u0131p halkay\u0131 geni\u015fletmem gerekti\u011fini fark ettim. Da\u011flar\u0131n uzan\u0131\u015f \u015feklinden dolay\u0131 olu\u015fan Akdeniz iklimine \u00e7alan mikroklimatik \u00f6zellikleri sayesinde il\u00e7ede bilinmeyen zamanlardan beri zeytin, incir, nar gibi bitkiler yeti\u015ftirilir. \u0130l\u00e7edeki zeytin bah\u00e7elerini ikiye ay\u0131rmak m\u00fcmk\u00fcn. Eski bah\u00e7eler daha \u00e7ok hobi bah\u00e7eleri gibi tasarlanm\u0131\u015f. Bu bah\u00e7elerin as\u0131l k\u00fctlesi zeytinken bunlar\u0131n yan\u0131nda bah\u00e7e sahipleri kendi t\u00fcketimleri i\u00e7in incir, nar, ceviz, kay\u0131s\u0131, dut gibi a\u011fa\u00e7lar da dikmi\u015ftir. Bu bah\u00e7elerdeki zeytin a\u011fa\u00e7lar\u0131n\u0131n tahmini ya\u015f\u0131 500 y\u0131l kadar geriye gitmektedir. Yeni bah\u00e7eler ise kapama zeytin bah\u00e7eleridir ki genellikle k\u00f6ylerdedir bunlar.<\/p>\n\n\n\n<p>Eski bah\u00e7elerde zeytin \u00e7e\u015fitlili\u011fi zenginlik g\u00f6sterir. B\u00fct\u00fcn isimler yerel dillerdedir. Bu isimler K\u00fcrt\u00e7e ve muhtemelen bir k\u0131sm\u0131, il\u00e7ede daha \u00f6nceleri yerle\u015fik n\u00fcfuslar\u0131ndan \u00f6t\u00fcr\u00fc Ermenice, S\u00fcryanice veya Arap\u00e7ad\u0131r. En \u00fcnl\u00fc zeytin \u00e7e\u015fidimiz xirxal\u00ee (halhal\u0131) olmak \u00fczere, di\u011ferleri zoncik, xurs\u00eak\u00ee, melqebaz\u00ee, belot\u00ee, kejik, maw\u00ee, gulek\u00ee ve giroverdir. Bunlar\u0131n d\u0131\u015f\u0131nda \u00e7e\u015fidi tespit edilemeyen, daha do\u011frusu isim verilmeyen zeytinler de vard\u0131r. Yeni bah\u00e7elerde ise ana \u00e7e\u015fit halhal\u0131 olmakla birlikte Nizip ya\u011fl\u0131k, Gemlik (trilye) ve arbequina gibi \u00e7e\u015fitler de vard\u0131r.<\/p>\n\n\n\n<p>\u200bHalhal\u0131 \u00e7e\u015fidi genellikle k\u0131rma sofral\u0131k olarak de\u011ferlendirilir ve ra\u011fbet g\u00f6r\u00fcr. Babaannem ve ba\u015fka ya\u015fl\u0131lardan duydu\u011fum kadar\u0131yla eskiden halhal\u0131 ve melqebaz\u00ee \u00e7e\u015fitleri ya\u011fl\u0131k; geriye kalan iri zeytinler ise sofral\u0131k olarak de\u011ferlendirilirmi\u015f. \u00d6yle tahmin ediyorum ki cumhuriyetten itibaren ay\u00e7i\u00e7e\u011fi ya\u011f\u0131 ve margarinlerin yayg\u0131nla\u015fmas\u0131yla beraber uzunca bir d\u00f6nem zeytinya\u011f\u0131 \u00fcretimi neredeyse durma noktas\u0131na gelmi\u015f ve halhal\u0131 zeytini de k\u0131rma sofral\u0131k olarak de\u011ferlendirilmeye ba\u015flanm\u0131\u015ft\u0131r. Son y\u0131llarda zeytinya\u011f\u0131yla ilgili olu\u015fan fark\u0131ndal\u0131k sayesinde durum tersine d\u00f6nmektedir. Bu bah\u00e7elerde hi\u00e7bir kimyasal g\u00fcbre kullan\u0131lmamaktad\u0131r. G\u00fcbre olarak k\u00f6ylerden veya il\u00e7e merkezinden toplanan ah\u0131r g\u00fcbresi (a\u011f\u0131rl\u0131kl\u0131 olarak koyun ve ke\u00e7i) kullan\u0131l\u0131r. Co\u011frafi konumundan dolay\u0131 4-5 farkl\u0131 r\u00fczg\u00e2ra maruz kalan ve bir de nem oran\u0131n\u0131n d\u00fc\u015f\u00fckl\u00fc\u011f\u00fcnden dolay\u0131 T\u00fcrkiye\u2019nin di\u011fer zeytin yeti\u015ftirilen y\u00f6relerinde rastlanan halkal\u0131 leke, antraknoz, zeytin g\u00fcvesi, zeytin sine\u011fi, vertisilyum solgunlu\u011fu gibi hastal\u0131k ve zararl\u0131lara neredeyse hi\u00e7 rastlanmamakta ve bu y\u00fczden bunlara y\u00f6nelik herhangi bir ila\u00e7lama yap\u0131lmamaktad\u0131r. Dolay\u0131s\u0131yla \u00fcreticilerin organiklik sertifikas\u0131 olmasa da asl\u0131nda organik bir \u00fcretim \u015fekli uygulanmaktad\u0131r. Sulama imk\u00e2n\u0131 olan \u00e7ift\u00e7iler ortalama 10-15 g\u00fcnde bir sulama yapmaktad\u0131r.
